🍋 Lemon Drizzle Cake - A family favourite that never lasts long.

Moist, oh so fresh, zesty, and full of joy.

Ingredients

For the cake:

  • 175g caster sugar

  • 175g self-raising flour

  • 175g softened butter

  • 3 eggs, beaten

  • Finely grated zest of 1 lemon

  • ¾ level tsp baking powder

For the drizzle:

  • 100g granulated sugar

  • Juice of 1 lemon


Method

  1. Preheat your oven to 180°C (160°C fan) and grease a loaf tin (or line with parchment).

  2. In a large bowl, cream the butter and sugar together until light and fluffy.

  3. Add the eggs gradually, beating well. Fold in the flour, lemon zest, and baking powder.

  4. Pour the mixture into your tin and level the top.

  5. Bake for 35–40 minutes, or until golden and a skewer comes out clean.

  6. While the cake is still warm, mix the granulated sugar with the lemon juice and spoon the drizzle over the top.

  7. Let cool slightly (if you can wait!), then slice and serve with joy.
